Hey hi there lovely people! This post is in English for my Insta friend Ann!

Today is a no fuss, not much time kind of day so I'm just gonna drop here my easy recipe for a sweet, all natural treat that is packed with goodness, protein and fiber! If you are not scared of getting your hands dirty, this recipe is for you!

Ingredients (approx. 20 bites)

16 medjool dates with no pit

3 tbsp natural peanut butter

1/4 cup flax seeds

1/4 cup chia seeds

3/4 of rolled oats

1/2 cup hazelnuts

Salt

Cinnamon and vanilla powder to taste (these are optional if you prefer other ‘’seasoning’’ be creative!)

Topping:

2 tbps nut butter (I took creama di pistacchio)

1teaspoon coconut oil

Crushed nuts to taste (LOL)

If you have a very powerful mixer, which I don’t have at home, you can mix all of the 6 first ingredients together. If like me your mixer is only good at mixing soup, then follow these steps:

First of all, prepare a cooking plate covered with a baking sheet that will later go in the freezer.

  1. Boil your dates in water for 2 minutes.

  2. Rince them under cold water and make sure to remove all the pits. You can keep some of the cooking water appart to make the mixing easier.

  3. Crush your flax seeds in the mixer and then add the dates and a bit of the cookig water if necessary. You want to get a tick paste texture.

  4. Get this mixture in a big bowl and add the chia seeds, rolled oat, peanut butter, crushed hazelnuts (not too much crushed for me, I like to have big chunks of them in the bites) with salt, cinnamon and vanilla powder.

  5. Mix everything with a wooden spoon and eventually with your hands.

  1. Start forming balls of your preferred sized. This is a messy step but oh! So fun! Please enjoy! If you want your bites denser, add some dry ingredients (crushed nuts or rolled oats) but not too much. You’ll have approximately 20 bites depending on how big your dates are and how much you follow the recipe (I never follow recipes).

  2. Put all the bites on the previously prepared baking tray and let them chill in the freezer for 20-30 mins. You don't want them to be frozen, just chilled so they can stay firm.

For the topping, simply melt gently your coconut oil with your preferred nut butter (stove top very slowly or microwave but DO NOT BAKE, just melt and mix).

When ready, dip the top of your bites in this mixture and add some crushed pistachio or any other nuts of your preference on top.

You can keep them up to a week in the fridge (I don't know how they react after, we ate all of them in 3 days!)
